Tacos Al Pastor

Makes 6 servings:

Tacos Al Pastor Marinade

  • 1 two-ounce packet of Chicamonina Tacos Al Pastor Sauce Starter Blend

  • 1 cup of pineapple juice

Mix ingredients in a saucepan. Bring to a low simmer, then cover and simmer for 10 minutes, stirring occasionally. Cool sauce to room temperature.

Directions for Tacos

  • Tacos Al Pastor Marinade (see above)

  • 2.5 lbs. of diced pork butt or shoulder

  • 3-4 strips of uncooked diced bacon (optional)

  • 2 cups diced pineapple

  • Warm corn tortillas

Marinade diced pork & bacon overnight with Tacos Al Pastor marinade. Place marinated pork & bacon in a 12” non-stick skillet. Cook on medium for 30 minutes, stirring occasionally and then cover skillet and simmer on low for 30 minutes, stir occasionally. Cook until fork tender. Season with salt if desired. Serve with warm tortillas and diced pineapples for soft tacos. Garnish with diced onions and cilantro if desired.

Tips:

-Best if pork is marinated overnight, however still tasty if this step is skipped. 

-Marinated meat can be cooked in a crockpot on low until fork tender.
