ABOUT OUR PRODUCTS

Authentic, real, Mexican sauce starters that are clean, tasty, flavorful and easy to prepare.

Premium Red Chile

Our sauce starters are made from Hatch chile grown on small family-owned farms in New Mexico. Our chile does not develop the bitterness that can occur when quickly heated in hot industrial ovens. Our chile pods are slowly ripened on the plant allowing them to retain their naturally sweet, earthy, intense, and rich flavor.

When they are ready, the red chile pods are de-stemmed and de-seeded in order to produce a high quality “uncut” ground powder. “Uncut” red chile contributes to the unique rich umami flavor. Most red chile aficionados use slow ripened, de-stemmed and de-seeded red chile. A red chile aficionado is like a wine connoisseur, only the best is acceptable.  

Our red chile sauce starters are small batched and hand-crafted at every step: from seed to you.

Chicamonina is the nickname that my father gave me when I was a toddler. His calling me Chicamonina told me I was deeply loved. His days spent working with spices, the home my parents provided, the great homemade food created by my mother, and all my parents actions spoke to the love that surrounded me growing up.

By calling my business Chicamonina, my hope is that you will know the care in the production of my products speaks to the love that will surround your family as they enjoy the delicious and pure Mexican food you provide for them.
